The Phat Chameleon at Pullman Maldives Maamutaa Resort stands out as the only plant-based restaurant in the Maldives with a live kitchen. Here, guests are treated to a delectable array of vegan and vegetarian dishes served amidst a tranquil garden setting, promising an experience that even the most dedicated carnivore would savour.

The natural scents wafting from the garden, coupled with the aroma of freshly prepared dishes, create an unforgettable ambiance, inviting diners to unwind and indulge in a feast of vibrant, flavourful, and nourishing dishes. Tables are nestled on the open deck near the live kitchen or scattered amidst the lush garden under gazebos and fruit trees adorned with twinkling lights. A gentle breeze carries the fragrances of fresh mint, lemongrass, and tarragon, tantalising the senses and setting the stage for a remarkable dining affair.

Phat Chameleon invites diners to embark on a culinary journey where sustainability and innovation are at the heart of each dish. The menu, crafted entirely in-house by a team of skilled chefs, promises a unique and memorable dining experience. From homemade tofu and soy milk to gnocchi and aromatic dressings, each item is prepared and presented with meticulous care.

The menu boasts 22 vegan and 16 vegetarian dishes, drawing inspiration from diverse cuisines including Japanese and Asian. Diners are spoilt for choice with tempting starters such as vegetarian ceviche, refreshing salads, sushi platters, and fragrant coconut soup. Main courses feature butternut tortellini, aubergine parmigiana, red capsicum gnocchi, and tofu steaks, followed by indulgent desserts such as homemade sorbets, fresh fruit platters, banana brownies, and chocolate pumpkin cheesecake drizzled with vanilla bean sauce.

Phat Chameleon is open on Tuesdays to Thursdays, Saturdays, and Sundays from 6:30 pm to 10:30 pm giving guests ample opportunity to savour the exquisite plant-based creations and experience the epitome of sustainable, flavourful dining.

The landscape of vegetarian and vegan dining has evolved significantly in recent years. What was once confined to simple omelettes or salads has transformed into expansive and diverse menus catering to a wide range of dietary preferences.
